You must power the ADS1115 from the 3.3volt pin of the WeMos, and keep ADS inputs between 0 and 3.3volt. That also means a PGA gain of 2 (or higher) if you want to use it's full resolution.

The D1 Mini has a CH340 chip for the USB adaption which draws 0.15mA alone. I get the impression that the referred page doesn't show true consumption values. I just watched a video of ESP-01 in deep sleep. It drew 3mA while the documentation for exactly ESP-01 says it should draw 20uA. What's up with this.
The WEMOS D1 contains a completely different processor (ESP8266) than the UNO or Nano. And it does not emulate a 386P. But both can be programmed with the Arduino IDE ( if the board manager for ESP8266 is installed). And you must select the WEMOS D1 in IDE when compiling for WEMOS D1. And not every library that works with UNO/Nano does work
The power drop to 3.4 V for the converter is suspicious; Either not enough goes in (12V side) or too much is being pulled out - either can trigger a voltage drop. You did say that the Wemos got hot - another concern that a too much power is passing a component, which could be due to a short or due to too much power needed for the stepper-driver.
